Grinchmas Roast Beast (No whos were harmed in the making of this recipe)

Ingredients:

  • Prime Rib Roast: 5lb roast
  • Olive Oil – 2 tbsp
  • Seasoning:
    • Salt – ½ tsp
    • Pepper – ½ tsp
    • Garlic Powder – 1 tsp
    • Onion Powder – 1 tsp
    • Basil – 1 tsp
    • Oregano – 1 tsp
    • Parsley – 1 tsp
    • Thyme – ½ tsp
    • Rosemary – ½ tsp
  • Kitchen Twine/Rope

For the Au Jus:

  • Beef Drippings – ¼ cup
  • Flour – 1 ½ tbsp
  • Beef Broth – 2 cups

Preparation:

  1. Heat the oven to 300F
  2. Lightly cut crisscross lines into the fat cap of the roast to help render while cooking.
  3. Tie the roast using the kitchen twine, leaving about 1-2 inch gaps, to help the roast keep its shape.
  4. Rub down the roast with the olive oil.
  5. Mix and combine all the seasonings into a small bowl and then season the roast on all sides generously.
  6. Prepare a sheet pan, lined inside with aluminum foil, with a roasting rack.
  7. Place roast on the rack and place the sheet into the oven cooking 20 minutes per pound at 300F.
  8. Pull out the roast when it reaches about 125-130F internally.
  9. After cooking, tent the roast with foil and let it rest for 20 minutes.
  10. To start preparing the Jus, drain ¼ of beef drippings from the roasting pan.
  11. Heat the drippings in a skillet on medium-high heat
  12. Whisk in the flour and keep cooking while whisking consistently until it thickens (Roughly 3 minutes)
  13. Gradually add the beef broth while whisking constantly. Increase the heat to high and bring the sauce to a boil
  14. Boil for 2-3 minutes then salt and pepper to taste.
  15. Carve into your roast, plate it with some Jus and any sides!
