What's Cookin' with Bryce
Grinchmas Roast Beast (No whos were harmed in the making of this recipe)
Ingredients:
Prime Rib Roast: 5lb roast
Olive Oil – 2 tbsp
Seasoning:
Salt – ½ tsp
Pepper – ½ tsp
Garlic Powder – 1 tsp
Onion Powder – 1 tsp
Basil – 1 tsp
Oregano – 1 tsp
Parsley – 1 tsp
Thyme – ½ tsp
Rosemary – ½ tsp
Kitchen Twine/Rope
For the Au Jus:
Beef Drippings – ¼ cup
Flour – 1 ½ tbsp
Beef Broth – 2 cups
Preparation:
Heat the oven to 300F
Lightly cut crisscross lines into the fat cap of the roast to help render while cooking.
Tie the roast using the kitchen twine, leaving about 1-2 inch gaps, to help the roast keep its shape.
Rub down the roast with the olive oil.
Mix and combine all the seasonings into a small bowl and then season the roast on all sides generously.
Prepare a sheet pan, lined inside with aluminum foil, with a roasting rack.
Place roast on the rack and place the sheet into the oven cooking 20 minutes per pound at 300F.
Pull out the roast when it reaches about 125-130F internally.
After cooking, tent the roast with foil and let it rest for 20 minutes.
To start preparing the Jus, drain ¼ of beef drippings from the roasting pan.
Heat the drippings in a skillet on medium-high heat
Whisk in the flour and keep cooking while whisking consistently until it thickens (Roughly 3 minutes)
Gradually add the beef broth while whisking constantly. Increase the heat to high and bring the sauce to a boil
Boil for 2-3 minutes then salt and pepper to taste.
Carve into your roast, plate it with some Jus and any sides!
